Salmon patties with mango salsa

Ingredients

1 garlic clove peeled
500g fresh salmon , skin removed , roughly chopped
1 red onion diced
50 g dry breadcrumbs
1 egg
50 g chopped coriander
1 mango diced
60ml lime juice



To Make Patties

Place the garlic , salmon and half the onion in a food processor and process until coarsely minced
Add the breadcrumbs , egg and half the coriander and season
Mix together and divide into six equal portions
Shape into patties , cover and refrigerate for 30 minutes


To Make Salsa

Place the mango and 2 tblspn lime juice and remaining onion , coriander in a bowl and mix together
Heat a lightly greased non stick frying pan
Add the remaining lime juice and cook the patties for 4-5 minutes each side
Serve with the salsa

Serves : 6
